Orange Marmalade Pinwheel Scones with Cinnamon, Butter & Sultanas

these are yummy and great fun for kids to make. Gwen (4 1/2yrs old) really enjoyed herself, especially spreading the butter, 

Makes: 12–14 scones

Ingredients

For the scone dough:

  • 3 cups (375 g) self-raising flour
  • ¼ cup (50 g) sugar
  • ½ teaspoon salt
  • ¾ cup (180 ml) milk (plus extra if needed)
  • 70gm cold butter, cubed
  • 3–4 tablespoons orange marmalade

For the swirl:

  • 3 tablespoons butter, softened
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ½ cup (75 g) sultanas

Optional: milk or egg wash for glazing ( As you can see from the photo, I didn't do this as it was just for us to eat at morning tea in the nursery).

Instructions

  1. Preheat your oven to 200°C (390°F). 
  2. Line a baking tray with baking paper.
  3. In a large bowl, combine self-raising flour, sugar, and salt.
  4. bub in butter to form fine breadcrumbs.
  5. In a separate bowl, whisk together milk and marmalade.
  6. Pour the wet ingredients into the dry ingredients and mix gently until just combined. If the dough is too dry, add a little extra milk, 1 tablespoon at a time.
  7. On a lightly floured surface, roll the dough into a rectangle about ½–1 cm thick.
  8. Mix the softened butter, sugar, and cinnamon together.
  9. Spread this mixture evenly over the rolled dough.
  10. Sprinkle sultanas over the top.
  11. Starting from one long side, roll the dough into a tight log.
  12. Slice into 2–3 cm thick pinwheels and place them cut-side down on the prepared tray.
  13. Glaze (optional): Brush the tops with a little milk or beaten egg for a golden finish.
  14. Bake for 12–15 minutes, or until golden and cooked through.

Serving suggestions:

  • Let cool slightly on a wire rack.
  • Serve warm or at room temperature to be eaten by themselves. Or serve with butter, extra marmalade, citrus butter (see recipe), or fresh oranges.
