Orange Marmalade Pinwheel Scones with Cinnamon, Butter & Sultanas

these are yummy and great fun for kids to make. Gwen (4 1/2yrs old) really enjoyed herself, especially spreading the butter,
Makes: 12–14 scones
Ingredients
For the scone dough:
- 3 cups (375 g) self-raising flour
- ¼ cup (50 g) sugar
- ½ teaspoon salt
- ¾ cup (180 ml) milk (plus extra if needed)
- 70gm cold butter, cubed
- 3–4 tablespoons orange marmalade
For the swirl:
- 3 tablespoons butter, softened
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- ½ cup (75 g) sultanas
Optional: milk or egg wash for glazing ( As you can see from the photo, I didn't do this as it was just for us to eat at morning tea in the nursery).
Instructions
- Preheat your oven to 200°C (390°F).
- Line a baking tray with baking paper.
- In a large bowl, combine self-raising flour, sugar, and salt.
- bub in butter to form fine breadcrumbs.
- In a separate bowl, whisk together milk and marmalade.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. If the dough is too dry, add a little extra milk, 1 tablespoon at a time.
- On a lightly floured surface, roll the dough into a rectangle about ½–1 cm thick.
- Mix the softened butter, sugar, and cinnamon together.
- Spread this mixture evenly over the rolled dough.
- Sprinkle sultanas over the top.
- Starting from one long side, roll the dough into a tight log.
- Slice into 2–3 cm thick pinwheels and place them cut-side down on the prepared tray.
- Glaze (optional): Brush the tops with a little milk or beaten egg for a golden finish.
- Bake for 12–15 minutes, or until golden and cooked through.
Serving suggestions:
- Let cool slightly on a wire rack.
- Serve warm or at room temperature to be eaten by themselves. Or serve with butter, extra marmalade, citrus butter (see recipe), or fresh oranges.
