Lemon Crumble Tart-Buttery Crumble with a Lemon Custard Filling

Ingredients
- 115g butter, room temperature
- 125g sugar
- 125g all-purpose flour
- Zest of 1 lemon
- ½ cup lemon juice
- 1 ½ cups milk
- 2 tablespoons butter
- 2 eggs, lightly beaten
- 3 tablespoons flour¾ cup sugar
Method
- In a bowl, combine crumble ingredients together with hands until it forms a loose dough
- Pat half of the dough evenly into a 22cm round pie dish or tin
- Preheat oven to 180°C
- In a bowl, combine flour, sugar and 2 tablespoons of milk
- Heat remaining milk in a saucepan on low heat. Add the flour mixture and stir until it has a custard like consistency
- Add lemon zest, lemon juice, butter and beaten eggs, stirring constantly until combined and thick
- Pour onto crumb crust then sprinkle remaining half of crumble on top of the mixture
- Bake for 20-25 minutes or until set
- Allow to cool for 60 minutes before cutting.
Serving Suggestions
Sprinkle with icing sugar and top with lemon slices to serve. Great with whipped cream, mascarpone cream or yoghurt.
