Mandarin, Beetroot & Mint Salad

The mandarin and lime juice pairs well with the sweet earthy flavour of the beetroot. Super quick to prepare, attractive and tasty.

Ingredients
- 4 mandarins, peeled and sliced crossways
- 2 medium beetroot, peeled and put through spiralizer (or grated)
- 1 handful mint leaves
- 2 tablespoons crème fraiche
Dressing Ingredients
- Juice of 1 lime
- 1 tablespoon avocado (or olive) oil
Method
- In a small bowl, whisk the dressing ingredients together and set aside
- Place the beetroot and mandarin slices on a serving platter
- Drizzle the dressing over the salad. Sprinkle with mint leaves and add dollops of crème fraiche
