Mandarin, Beetroot & Mint Salad

The mandarin and lime juice pairs well with the sweet earthy flavour of the beetroot. Super quick to prepare, attractive and tasty.

Ingredients

  • 4 mandarins, peeled and sliced crossways
  • 2 medium beetroot, peeled and put through spiralizer (or grated)
  • 1 handful mint leaves
  • 2 tablespoons crème fraiche

Dressing Ingredients

  • Juice of 1 lime
  • 1 tablespoon avocado (or olive) oil

Method

  1. In a small bowl, whisk the dressing ingredients together and set aside
  2. Place the beetroot and mandarin slices on a serving platter
  3. Drizzle the dressing over the salad. Sprinkle with mint leaves and add dollops of crème fraiche
