Roasted Lemon Cauliflower-Quick, Simple, and Super Tasty

The children in our family absolutely love this. We have been known to make make beautiful dinners with this dish as a side and all the children want to eat is this cauliflower. Roasting the cauliflower makes it sweet and beautifully caramelised. It needs the fresh lemon juice to give it balance and brightness. This dish is perfect served warm straight from the oven or at room temperature alongside quiche, grilled fish, chicken or meat, or a fresh salad.

Preparation: 10 minutes
Cooking: 25–30 minutes

Ingredients

  • 1 head cauliflower, cut into small florets
  • Zest and juice of 1 large lemon
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 extra tablespoon of olive oil

Method

  1. Preheat oven to 200°C (fan 180°C).
  2. In a large bowl, combine the cauliflower florets, lemon zest, olive oil, salt, and pepper. Toss well to coat evenly.
  3. Spread the cauliflower out in a single layer on a flat baking tray.
  4. Roast for 15–25 minutes, turning halfway through, until golden and tender. 
  5. Remove from the oven, drizzle with lemon juice ,a tablespoon of extra oil oil and toss lightly before serving.

Serving

For extra flavour, sprinkle with chopped fresh parsley or grated parmesan just before serving. Serve with lemon wedges. If you wish to serve this with a curry, change the olive oil to peanut or sesame oil and serve with chopped peanuts or toasted sesame over the top.
