Orange Bircher Muesli- like a ray of sunshine in the morning

We love Bircher Muesli! This recipe makes the most of beautiful  home grown navel or valencia oranges. Mandarins or tangelos can also be used. Note: If you use blood oranges the muesli will have a deep pink colour.

Serves: 2 servings
Preparation: 5 minutes

Ingredients:

1 cup rolled oats
¼ cup freshly squeezed orange juice
1 cup nut milk (or milk of choice)
1 orange for topping, sliced
2 tablespoons chia seeds
1/4 cup sliced almonds
¼ cup raisins
Pinch of ground cinnamon
Maple syrup, to serve

Method:

  1.  Place the muesli in a medium bowl.
  2.  Pour over the orange juice and milk.
  3.  Cover and place in the fridge overnight to soak
  4.  Divide the muesli mixture among serving bowls.
  5. Top with chia, orange, almonds, and raisins.
  6. Drizzle with a little maple and cinnamon to serve

Variations:

  • Add grated apple with the orange juice and milk
  • Substitute 1 cup milk with 1/2 cup milk and 1/2 cup unsweetened yoghurt
  • Serve with banana
  • replace raisins with craisins or apricots
