Mandarin Salad with Citrus Vinaigrette

This quick to make salad not only tastes good, it is good for you. Mandarins are a great source of Vitamin C and Folate, making them the perfect choice for kids and women during pregnancy. We eat this salad a lot as we are very fortunate to have access to cheap/free avocados and we love the combination of flavours.

Ingredients:
- Salad
5 mandarins, peeled and separated
4 cups mixed greens
1 handful fresh parsley, roughly chopped
1/3 cup sliced almonds, roughly chopped
1 avocado, sliced
1/3 cup pomegranate seeds or dried cranberries
Dressing
Zest of 1 mandarin, grated
Juice of 1 mandarin
Juice of 1 lemon
¼ cup olive oil
1 tablespoon honey
Pinch salt & pepper
Method:
- Place the dressing ingredients into a small bowl, whisk to combine and set aside.
- In a large bowl, combine the salad ingredients.
- Drizzle dressing over the salad and serve.
