Orange Crispy Noodle Salad- colourful and tasty

This orange & crispy noodle salad is one for the recipe book. It is packed with flavours, colours and textures you and your whanau will love. It is quick and easy to make. You could add avocados to turn it into a meal or serve with fish, pork, chicken or quiche. Alice, Gwen and Joe love this salad.

Serves: 6 as a side
Preparation: 15 minutes

Ingredients:
3 oranges, peeled and diced
3 cups spinach or romaine lettuce, roughly chopped
2 cups red cabbage, roughly chopped
1 large carrot, finely sliced
1 spring onion, finely sliced
¼ cup sliced almonds
1 cup crispy noodles
Fresh parsley or coriander to garnish

Dressing:
1 clove garlic, minced
4 tablespoons olive oil
3 tablespoons white wine vinegar
2 tablespoons soy sauce or tamari
1 tablespoon sesame oil

Method:
In a large bowl, combine spinach, red cabbage, carrot, onion and almonds
Whisk dressing ingredients together in a bowl
Cover salad with orange pieces and noodles. Drizzle dressing over the salad, garnish with parsley or coriander and serveĀ
