Gran’s Yummy Lemon and Nut Loaf

When we were looking thru Gran's recipes, we came across this one. She commented: "Ooh, this is a goodie. Real yummy." It certainly is. The lemon juice and caster sugar syrup add a lovely fresh taste and give moistness to the loaf. The addition of the nuts elevate this loaf, making it into something special.  

Ingredients

  • 115g butter
  • 1 c caster sugar
  • 2 eggs
  • ½ c milk
  • ¼ cup chopped nuts (We recommend increasing 1/2 cup)
  • 1½ c self-rising flour
  • ¼ tsp salt
  • ¼ cup extra caster sugar
  • Grated rind and juice of 1 large lemon

Method

  1. Cream butter and sugar
  2. Add eggs
  3. Add sifted dry ingredients alternately with the milk
  4. Add nuts and lemon rind
  5. Bake in greased loaf tin 20cm x 10cm in moderate oven for 40 to 45 mins
  6. Mix extra caster sugar with the lemon juice until dissolved
  7. When the loaf is cooked and hot from the oven pour the lemon juice mixture over it
  8. Leave in the tin to cool.

Variations

  • Nice with any lemon, lime, tart orange or combination citrus.  Do not use a sweet citrus as the loaf needs the sweet and tart combination.
  • We like adding long strips of peel to the juice and caster sugar mixture. It looks lovely.
  • Serve with cream, yoghurt, fresh berries, fresh limes, lemonade, mandarins or oranges.
  • We love using pistachio nuts due to their colour, but walnuts, almonds and cashews are all delightful.
