Grapefruit, Cabbage and Almond Salad with a Lime Mustard Dressing.

This easy to prepare salad looks vibrant, tastes great and is easy to modify. This is really important if you want to use the ingredients you have on hand. We like to substitute the almonds for walnuts and use 1/4 red and 1/4 green cabbage. We are chilli fans and like to add a finely chopped red chilli.

Serves: 4 as a side

Ingredients   

2 grapefruit, peeled and chopped into small pieces
½ small red cabbage, chopped
¼ red onion, thinly sliced
¼ cup almonds, roughly chopped
1 handful parsley, chopped
¼ cup feta, crumbled

Dressing

2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
3 tablespoons olive oil
Juice of 1 lime
Black pepper

Method   

In a small bowl, mix-together the dressing ingredients

In a large bowl, combine all the salad ingredients and drizzle with salad dressing

Notes

  • Grapefruit can affect some prescription medicines so be sure to check your labels before enjoying them
  • This recipe is equally delicious with the more commonly available yellow grapefruit
