Lemon Orzo Salad - quick to prepare with a delicious lemony flavour

Here’s a zesty Lemon Orzo Salad to try! Quick to prepare with a delicious lemony flavour. We prefer to make this with Lisbon, Yen Ben or Genoa Lemons for a fresh, punchy lemon flavour. We also like to add the zest of half a lemon. For a change swap out the Lemon for Lime, and the parsley, for coriander. Delete the mustard and replace with fish sauce. This then makes a lovely Thai flavoured Orzo Salad.

Ingredients

  • 1 cucumber, diced
  • 1 ½ cups cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 capsicum, deseeded, diced
  • 1 large handful parsley, roughly chopped
  • 1 ½ cups dried orzo pasta
  • 1 lemon

Dressing

  • Juice of 1 lemon
  • Zest of 1 lemon
  • ¼ cup olive oil
  • 1 tablespoon Dijon mustard
  • Pinch salt & pepper

Method

  • Bring a large saucepan of salted water to a boil.
  • Add orzo and cook until tender for 6-10 minutes. 
  • Drain and put orzo into a salad bowl.
  • In a small bowl, whisk the dressing ingredients together.
  • Add the dressing to the drained orzo and mix well
  • Gently stir in the cucumber, tomatoes, onion, capsicum and parsley.
  • Serve with wedges of lemon.
