Lemon Orzo Salad - quick to prepare with a delicious lemony flavour

Here’s a zesty Lemon Orzo Salad to try! Quick to prepare with a delicious lemony flavour. We prefer to make this with Lisbon, Yen Ben or Genoa Lemons for a fresh, punchy lemon flavour. We also like to add the zest of half a lemon. For a change swap out the Lemon for Lime, and the parsley, for coriander. Delete the mustard and replace with fish sauce. This then makes a lovely Thai flavoured Orzo Salad.

Ingredients
- 1 cucumber, diced
- 1 ½ cups cherry tomatoes, halved
- ½ red onion, thinly sliced
- 1 capsicum, deseeded, diced
- 1 large handful parsley, roughly chopped
- 1 ½ cups dried orzo pasta
- 1 lemon
Dressing
- Juice of 1 lemon
- Zest of 1 lemon
- ¼ cup olive oil
- 1 tablespoon Dijon mustard
- Pinch salt & pepper
Method
- Bring a large saucepan of salted water to a boil.
- Add orzo and cook until tender for 6-10 minutes.
- Drain and put orzo into a salad bowl.
- In a small bowl, whisk the dressing ingredients together.
- Add the dressing to the drained orzo and mix well
- Gently stir in the cucumber, tomatoes, onion, capsicum and parsley.
- Serve with wedges of lemon.
