The wonderful brown finger lime tree is still quite rare in NZ. The fruit of the brown finger lime tree is significantly larger than the more common green finger lime variety. As the fruit ripens, the skin stays brown while the stunning citrus caviar inside turns light pink. When placed in the mouth brown citrus caviar pops, releasing a fragrant lime juice. The brown finger lime has less seeds than green variety.
When ripe, the fruit is firm and comes away easily. Brown finger lime fruit will not continue to ripen once picked. Unripe fruit tastes quite bitter.
