Zesty Lime Curd- Quick and Easy to Make

This lime curd has a lovely fresh lime flavour. Make sure you heat over a low heat and whisk continually. Otherwise there is a chance that your curd could scramble.
Serves: Makes 2 cups
Preparation: 10 minutes
Cooking: 10-15 minutes
Ingredients
- ½ cup lime juice
- Zest of 1 lime
- 75g butter
- 1/3 cup caster sugar
- 3 eggs
Method
- Melt butter in a medium-sized, heavy-bottomed pot over a low heat. Remove from heat and allow to cool
- Lightly beat the eggs and whisk into the butter. Add lime juice, zest and caster sugar
- Place over a low heat and whisk continuously until mixture thickens
- Remove from heat and cool slightly before pouring lime curd into a sterilised jar. Once fully cool, place a lid on the jar and store in the fridge for up to two weeks
