Zesty Lime Curd- Quick and Easy to Make

This lime curd has a lovely fresh lime flavour. Make sure you heat over a low heat and whisk continually. Otherwise there is a chance that your curd could scramble.

Serves: Makes 2 cups

Preparation: 10 minutes

Cooking: 10-15 minutes

Ingredients

  • ½ cup lime juice
  • Zest of 1 lime
  • 75g butter
  • 1/3 cup caster sugar
  • 3 eggs

Method  

  1. Melt butter in a medium-sized, heavy-bottomed pot over a low heat. Remove from heat and allow to cool 
  2. Lightly beat the eggs and whisk into the butter. Add lime juice, zest and caster sugar
  3. Place over a low heat and whisk continuously until mixture thickens
  4. Remove from heat and cool slightly before pouring lime curd into a sterilised jar. Once fully cool, place a lid on the jar and store in the fridge for up to two weeks
