Tangelo Overnight Oats- A Creamy Citrus Delight

Looking for a new overnight oat recipe? Try tangelo overnight oats, or replace tangelo with oranges or mandarins.  This recipe contains lots of vitamin C, fibre and counts as one of your 5 plus a day.

Ingredients

  • Juice of 2 tangelos
  • 1 cup oats
  • 1 tangelo, sliced
  • ½ cup milk of choice
  • 2 tablespoons shredded coconut
  • ¼ cup maple syrup
  • Mint leaves

Method

  • In a bowl, mix the oats and tangelo juice. Cover and refrigerate overnight
  • In the morning, place the oats into two serving bowls
  • Serve with milk, coconut, mint, maple syrup and tangelo slices
