Mandarin and Fennel, Baked Feta Salad

We love simple, tasty and quick salads and when the salad contains some of our favourite ingredients, its just perfect. 
This is a great salad or side dish, but we do like to cut the fennel thinly. We like to add some nuts and crusty bread when we serve it as a light meal.

Serves: 4 as a side

Preparation: 10 Minutes

Cooking: 20 Minutes

Ingredients   

  • 4 mandarins, peeled, sliced crosswise
  • 100g feta, sliced length wise and then in half
  • 2 fennel bulbs, trimmed and sliced, fronds removed
  • Handful microgreens
  • Handful fresh thyme
  • Pinch ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon honey

Dressing

  • Juice of 1 mandarin
  • 1 tablespoon honey
  • 1 tablespoon olive oil

Method

  1. Preheat oven to 180° C
  2. Place feta blocks into a baking dish and drizzle with olive oil and honey. Sprinkle over pepper and thyme and bake for 15-20 minutes or until feta is golden
  3. Add dressing ingredients to a small bowl and mix well. Set aside
  4. Arrange fennel pieces onto a serving plate or bowl and top with mandarin, warm feta and thyme
  5. Drizzle with salad dressing and top with micro greens.
  6. Serve immediately

Alternative: 

Mandarin could be replaced with Orange and Haloumi works lovely instead of Feta.
