Tangelo Delicious Pudding - Greek Yoghurt and Fresh Tangelo Segments

Tangelos are one of the most underrated citrus fruits. They are incredibly juicy with a bright, refreshing flavour that works beautifully in desserts. A natural cross between mandarins and grapefruit, tangelos offer sweetness with just enough tang to lift rich ingredients like butter, eggs, and milk.

This baked tangelo pudding celebrates the fruit at its best, using both fresh juice and finely grated rind to create a light, softly set dessert with a golden top and delicate citrus flavour. Simple to prepare and best served warm, it’s a perfect way to showcase seasonal tangelos.

Ingredients   

  • 2 tangelos, rind grated
  • 1/3 cup tangelo juice
  • 3 eggs, separated
  • 1/3 cup self-raising flour, sifted
  • 1 cup milk
  • ¾ cup caster sugar
  • 80g butter, softened

Method

  1. Preheat oven to 180°C. Grease an ovenproof baking dish or 4 ramekins
  2. Using an electric mixer, beat butter, sugar, tangelo rind and egg yolks until creamy
  3. Using a metal spoon, fold in the flour and then add tangelo juice and milk
  4. Using an electric mixer, beat egg whites until soft peaks form. Fold into the batter
  5. Spoon the batter into a dish or ramekins and place into a baking pan. Pour hot water into the pan so it comes halfway up the side of the dish
  6. Bake for 40-45 minutes or until risen and golden

Dust with icing sugar and serve with Greek yoghurt. Serve immediately
