Mango Lime and Chilli Salsa

There’s nothing quite like this vibrant mix of sweet mango, zesty lime and a touch of chilli heat to liven up any meal. It’s perfect with grilled fish, chicken, pork, ham or even just scooped up with corn chips!
Ingredients
- 2 ripe mangoes, peeled and diced
- 1 small red onion, finely chopped
- 1 red chilli, finely diced (remove seeds for less heat)
- Zest and juice of 2 limes (fresh from your citrus tree if you’ve got one!)
- A small handful of fresh coriander, chopped (optional)
- A drizzle of olive oil
- Pinch of salt
Method
- In a medium bowl, combine the diced mango, red onion, and chilli.
- Add the lime zest and juice, drizzle with olive oil, and sprinkle with salt.
- Toss gently to combine, then fold through the chopped coriander.
- Let the salsa sit for 10–15 minutes before serving to allow the flavours to mingle.

Serving idea
Try spooning it over grilled snapper or barbecued chicken, or serve alongside tortilla chips for a bright, tangy snack. We love it over the summer holidays with Christmas ham or bar-b-queued pork.
Note
I had to use white onions as I didn't have any red onions. Raw red and white onion repeat on some members of the family. To stop this from happening I chop the onion, then pour boiling water over the onion and leave to sit for 5 minutes before draining. This makes the onions pleasant to eat.
