Crisp Cucumber Salad with vibrant Lime, Chilli and Sesame Oil

Crisp, cool cucumbers meet a bright kick of lime and a hint of chilli warmth in this easy salad. A drizzle of sesame oil ties it all together with a subtle nutty note — the perfect side for summer barbecues, Asian-inspired dishes, or a quick weekday meal.

Ingredients

  • 2 Lebanese or telegraph cucumbers, thinly sliced
  • 1 fresh red chilli, finely sliced (adjust to taste)
  • Zest and juice of 2 limes
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce (optional, for extra depth)
  • A pinch of sea salt
  • Extra limes cut into wedges for serving, toasted sesame seeds and fresh coriander leaves, to serve

Method

  • Place the sliced cucumbers and chilli in a medium bowl.
  • Add the lime zest and juice, sesame oil, soy sauce (if using), and salt.
  • Toss gently until the cucumbers are evenly coated.
  • Sprinkle with toasted sesame seeds and coriander just before serving.

Note:

I wasn't home when I made this so there are no toasted sesame seeds, lime quarters or coriander on the plate. As we all do do when cooking, I just had to use what was available. For extra crunch, chill the cucumber slices in cold water for 10 minutes before dressing.
