Fresh Lime and Chilli Guacamole-with tomato and red onion.

We are fortunate to live in the Western Bay of Plenty where avocados are cheap and plentiful. At the nursery we have an avocado orchard in front of us, to the side, and rear. We love using these great avos and our fresh limes to make fresh lime and chilli guacamole.
Creamy avocado pairs perfectly with tangy lime, juicy tomato, chilli, and crisp red onion for a classic dip that’s quick to make and full of flavour. Perfect for sharing, entertaining, or serving alongside tacos, grilled meats, or corn chips, this easy guacamole is proof that fresh citrus makes all the difference.

Ingredients
- 2 ripe avocados
- Juice of 1-2 fresh limes - to taste (depends on size of avocados and limes)
- 1 tomato, finely diced
- Chopped chilli- to taste. I used 1/8th scotch bonnet
- 2 tablespoons red onion, finely diced
- Salt and freshly ground black pepper, to taste
Method
- Halve the avocados, remove the stones, and scoop the flesh into a bowl.
- Mash gently with a fork, keeping some texture.
- Add lime juice, tomato, chilli, and red onion.
- Season with salt and pepper and stir to combine.
- Taste and adjust seasoning or lime juice if needed.
- Serve immediately or cover and place in the fridge

Tips
- Use nice ripe avocados
- Use freshly picked limes for the brightest flavour.
- If limes are out of season, use limequats or lemons
