Grapefruit, Tomato & Feta Salad with Balsamic Drizzle
Oct 07, 2024
Grapefruit is an under utilised citrus which tastes divine in this salad. We recommend Star Ruby Grapefruit, but any grapefruit will be yummy.
Serves: 4 as a side
Preparation: 10 minutes
Cooking: None
Ingredients
- 2 large grapefruit, peeled and chopped into small pieces
- 3 large tomatoes, sliced
- 4 cups rocket or baby spinach
- ¼ red onion, thinly sliced
- ¼ cup pistachios, shelled
- 1 handful basil leaves
- ¼ cup feta, crumbled
Dressing
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- Black pepper
Method
- In a small bowl, mix-together the dressing ingredients
- In a large bowl, combine all the salad ingredients and drizzle with salad dressing
Notes
- Grapefruit can affect some prescription medicines so be sure to check your labels before enjoying them.
- This recipe is equally delicious with the more commonly available yellow grapefruit.
