Grapefruit, Tomato & Feta Salad with Balsamic Drizzle

Grapefruit  is an under utilised citrus which tastes divine in this salad. We recommend Star Ruby Grapefruit, but any grapefruit will be yummy. 

Serves: 4 as a side
Preparation: 10 minutes
Cooking: None

Ingredients

  • 2 large grapefruit, peeled and chopped into small pieces
  • 3 large tomatoes, sliced
  • 4 cups rocket or baby spinach
  • ¼ red onion, thinly sliced
  • ¼ cup pistachios, shelled
  • 1 handful basil leaves
  • ¼ cup feta, crumbled 

Dressing

  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Black pepper

Method

  • In a small bowl, mix-together the dressing ingredients
  • In a large bowl, combine all the salad ingredients and drizzle with salad dressing

Notes

  • Grapefruit can affect some prescription medicines so be sure to check your labels before enjoying them.
  • This recipe is equally delicious with the more commonly available yellow grapefruit.
