Gran’s Uncooked Tangy Citrus Slice

Gran is the matriarch of the family. She is 96 years old and delightful. Everyone loves her and she is great fun. She was one of 13 children, 9 boys and 4 girls. She has 18 grandchildren and 16 great grandchildren. As you can imagine, she is a great cook and gardener.

Update:  Unfortunately Gran passed away on the 5th November, 2024 after an illness. The gap in our lives is huge, but we are blessed to have lots of wonderful memories and her recipes.

This recipe she cooked for us to share at Matariki 2024. It is lovely.

Base Ingredients

  • 100gm butter
  • 1PKt Wine Biscuits
  • 1C Desiccated Coconut
  • Rind of 2 citrus fruit-grated
  • ½ tin sweetened condensed milk

Icing Ingredients

  • 1C Icing Sugar
  • 2 T soft butter
  • Juice 2 citrus fruit

Method

  • Crush biscuits
  • Melt butter
  • Add condensed milk, coconut, grated rind and crushed biscuits
  • Combine well and press into greased dish
  • Combine icing sugar and butter
  • Add enough juice, a little at a time, mixing well until the icing is soft enough to spread
  • Spread over base with a knife
  • Refrigerate until firm,
  • Cut into squares

Variations

We like to change citrus rind for citrus powder sometimes. Also sprinkle rind or powder on top of the icing.

Amazing with any lime, orange, lemon or a mix of citrus.
