Creamy Lime and Coriander Dressing

This versatile dressing is easy to make and keeps well. When we don't have coriander in the garden or fridge we like to make a mixed herb and Lime dressing substituting the coriander for two to three leafy herbs from this list: sage, parsley, oregano, marjoram, chives, fennel, basil, dill, or mint. We don't tend to use rosemary of thyme as they can be too woody.
Recently we have found the garlic we have been buying to be unpleasant when raw. We suggest you try your garlic before adding to the sauce.
Serves: 1 Jar

Ingredients
- Juice of 3 limes
- ¾ cup Greek yoghurt
- Pinch of salt
- 1 teaspoon honey
- 2 Tablespoons olive oil
- 1 handful fresh coriander
- 1 garlic clove
Method
- Add all ingredients to a blender or food processor
- Blend until smooth
- Pour the dressing into a glass airtight jar
- Store in the refrigerator for up to a week.
This dressing is delicious served with salads and steamed vegetables
