Whipped Ricotta with Mandarins and Mandarin Caramel

Soft, silky, and citrus‑bright — this Whipped Ricotta Cream with Mandarin Caramel is everything we love at Citrus Direct. It turns a handful of simple ingredients into a spoon‑worthy dessert that feels both luxurious and effortless. Lightly sweetened ricotta gets whipped until soft, then topped with fresh mandarin slices and a glossy homemade caramel made from pure mandarin juice. Great for guests or a relaxing evening on your own.

Ingredients   

  • 3 mandarins, peeled and sliced crossways
  • 300g ricotta cheese
  • 4 tablespoons cream
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons maple syrup

Garnish

  • Nuts, chopped (optional)
  • Chocolate, grated (optional)

Mandarin caramel

  • Juice of 2 mandarins
  • 3 tablespoons sugar
  • 1 tablespoon butter
  • 2 tablespoons water

Method

  1. In a large bowl, combine/whip ricotta cheese, cream, vanilla extract and maple syrup. Place in the fridge for 30 minutes to firm up
  2. Heat a small saucepan over a medium heat and add the mandarin juice and sugar
  3. Stir ingredients for 5 minutes or until mixture turns to a dark caramel colour
  4. Remove from the heat and add the butter and 2 tablespoons of water
  5. Mix ingredients well and set aside to cool

To Serve

  1. Divide ricotta mixture into serving bowls.
  2. Arrange mandarin slices over the ricotta whip
