Whipped Ricotta with Mandarins and Mandarin Caramel

Soft, silky, and citrus‑bright — this Whipped Ricotta Cream with Mandarin Caramel is everything we love at Citrus Direct. It turns a handful of simple ingredients into a spoon‑worthy dessert that feels both luxurious and effortless. Lightly sweetened ricotta gets whipped until soft, then topped with fresh mandarin slices and a glossy homemade caramel made from pure mandarin juice. Great for guests or a relaxing evening on your own.
Ingredients
- 3 mandarins, peeled and sliced crossways
- 300g ricotta cheese
- 4 tablespoons cream
- 1/2 teaspoon vanilla extract
- 2 tablespoons maple syrup
Garnish
- Nuts, chopped (optional)
- Chocolate, grated (optional)
Mandarin caramel
- Juice of 2 mandarins
- 3 tablespoons sugar
- 1 tablespoon butter
- 2 tablespoons water
Method
- In a large bowl, combine/whip ricotta cheese, cream, vanilla extract and maple syrup. Place in the fridge for 30 minutes to firm up
- Heat a small saucepan over a medium heat and add the mandarin juice and sugar
- Stir ingredients for 5 minutes or until mixture turns to a dark caramel colour
- Remove from the heat and add the butter and 2 tablespoons of water
- Mix ingredients well and set aside to cool
To Serve
- Divide ricotta mixture into serving bowls.
- Arrange mandarin slices over the ricotta whip
- Drizzle with the mandarin caramel and top with nuts of choice and chocolate.
