Whipped Ricotta Cream with Mandarin and Mandarin Caramel

Ricotta can be really expensive so we like to make our own. It is easy to make and there is something great about know what it is that you are eating. We don't like almond essence so we leave that out of the recipe. We substitute the mandarins for oranges when our mandarins are out of season. This recipe looks nice layered in a glass or parfait dish.

Cooking: 5 Minutes

Ingredients   
3 mandarins, peeled and sliced crossways
300g ricotta cheese
4 tablespoons cream
1 teaspoon almond extract
2 tablespoons maple syrup

Garnish
Nuts, chopped (optional)
Chocolate, grated (optional)

Mandarin caramel
Juice of 2 mandarins
3 tablespoons sugar
1 tablespoon butter
2 tablespoons water

Method

  1. In a large bowl, combine ricotta cheese, cream, almond extract and maple syrup. Place in the fridge for 30 minutes to firm up
  2. Heat a small saucepan over a medium heat and add the mandarin juice and sugar
  3. Stir ingredients for 5 minutes or until mixture turns to a dark caramel colour
  4. Remove from the heat and add the butter and 2 tablespoons of water
  5. Mix ingredients well and set aside to cool
  6. To serve, divide ricotta mixture into serving bowls. Arrange mandarin slices over the ricotta whip
  7. Drizzle with the mandarin caramel and top with nuts of choice and chocolate and serve
