Lime and Coconut Chia Seed Puddings

In our family, Chia Seed pudding is usually eaten for breakfast, like Bircher muesli. But don't limit yourself to breakfast, it also makes a health snack or dessert.  These Lime & Coconut Chia Puddings are easy to prepare, look great and are yum.

Serves: 3

Ingredients:

• 2 limes (zested and juiced)
• 1 lime, sliced
• ½ cup chia seeds
• 1 ½ cups milk of choice
• 3 Tbsp honey
• 3 Tbsp desiccated coconut

Toppings (optional):
• 3 Tbsp almonds, chopped
• 1 mango, cubed
• Raspberries

Method:
1. In a bowl, combine milk, chia seeds, lime juice, lime zest, and honey.
2. Divide the mixture into 3 glasses and refrigerate for at least 4 hours or overnight.
3. Stir the pudding and top with fresh fruit, coconut, almonds, and a slice of lime.
Perfect for a light dessert or a quick snack! Refresh your taste buds with this vibrant treat!

Variations:

  • We also like to make this with mandarins, oranges or lemonades. Just follow the recipe but replace  the limes with your favourite citrus fruit. 
  • We also like to add blueberries to the overnight mixture or use them as a topping with your favourite citrus.
