Thai Lime Salad with a Sesame Lime Dressing

With autumn officially here and cooler nights – it doesn’t mean we need to let go of the crisp salad feeling! This Thai Lime Salad with a Sesame Dressing is the perfect kickstart to our lime season. It is crunchy, tasty, and filling. Limes are versatile and used extensively in Southeast Asian, Mexican, Indian and West Indian cuisine. 

We like to add chopped chilli and delete the tahini. The salad reminds us of Thailand. 

Serves: 4-6
Preparation: 15 minutes

Ingredients:

Salad
6 cups kale, or cabbage roughly chopped
3 carrots, cut into strips
2 capsicums, cut into matchsticks or julienned
300g edamame1 cup fresh coriander, roughly chopped
½ cup cashew nuts

Dressing 
Juice of 1 lime
2 cloves garlic, finely chopped
1 tablespoon honey/palm sugar
1 tablespoon sesame oil
¼ cup tahini

Method:

  1. In a large bowl add all salad ingredients and toss to combine
  2. In a small bowl, whisk together dressing ingredients 
  3. Drizzle over the salad and toss gently
  4. Serve with lime wedges
