Mini Key Lime Pies

We think this is a perfect sweet treat. We love the delicious combination of tart, creamy and biscuit crumb. These Mini Key Lime Pies will be a hit at a bar-b-que, baby shower, birthday party or for pudding!

Cook time: 15 mins

Ingredients

Key Lime Layer:

o Zest of 1 Key Lime
o ⅓ cup Key lime juice
o 2 egg yolks
o 400ml lite coconut cream

 Base

o 1 cup plain biscuit crumbs
o 3 Tbsp brown sugar
o 3 Tbsp butter, melted

Topping
o Greek yoghurt
o Key Lime wedges and zest

Method:

1. Preheat oven to 180°C fan bake.
2. Crush biscuits and mix with brown sugar, then stir in melted butter. Press into 4 ramekins.
3. Whisk key lime layer ingredients until creamy. Pour into ramekins.
4. Bake for 15 minutes until set.
5. Let cool for 30 minutes, then chill in the fridge for 2 hours.
6. Top with Greek yoghurt and lime wedges before serving.
