Maureen’s Marinated Raw Fish

This recipe is one of our family’s favourites. Stu, (Great Grandad to the youngsters) used to go fishing from Ohope whenever he could. We were spoilt as children with so much fresh fish that Maureen (Great Grandma) used to marinate it for a change.

This dish had pride of place at their 60th wedding anniversary and at Matariki last year following the unveiling of their headstone.

This recipe uses a lot of lemon which is why we have included it in our citrus recipe collection. We hope you enjoy it as much as we do.

Ingredients

  • 2 medium snapper fillets (any fresh firm white fish will work)
  • 4 Meyer lemons (Meyers were always used as they were the only ones grown in the garden. They are more mild than other lemons.)
  • 1 small brown onion
  • 1 small carrot
  • 1 stick of celery
  • 1 tomato
  • ½-1 tin of coconut cream

Method

  • Cut fish into cubes
  • Cover with juice of lemons
  • Stir and turn occasionally. Cover and leave overnight in fridge
  • Next morning drain off lemon juice
  • Add salt and pepper to taste
  • Add finely chopped raw onion, grated carrot, finely chopped celery and chopped tomato
  • Stir in coconut cream, enough to make the moisture moist.
  • Keep in fridge until required.

You can alter the vegetables eg: substitute spring onions, capsicum, coriander, cherry tomatoes, chilli, whatever takes your fancy.
