Classic Lemon Coconut Slice with Fresh Lemon Zest & Juice

There’s something special about a good lemon slice. Buttery, soft and generously dusted with icing sugar. Our version is lifted with lots of fresh lemon zest and juice for a wonderful citrus taste. The addition of coconut gives it a subtle texture and sweetness, balancing the tang without overpowering it.

This is the kind of bake that suits morning tea, school lunches or a simple afternoon treat — easy to make, reliable, and always popular. When you start with fresh lemons, you don’t need much else.

Ingredients

  • 250 grams butter
  • 1 3/4 cups caster sugar (We love our baking extra zesty so we use our citrus sugar)
  • 4 Eggs
  • 1 1/2 cups plain white flour
  • 1 cup desiccated coconut
  • Zest of 3 lemons
  • 1/3 cup fresh lemon juice
  • Icing sugar, to dust

Method

  • Preheat oven to 180º C.
  • Line a 20 x 30cm slice pan with a small spray of cooking spray and baking paper.
  • Melt the butter in a saucepan over low-medium heat. Remove from the heat and stir in castor sugar until combined.
  • Add eggs, one at a time, mixing well after each addition, until mixture is thick and glossy.
  • Sift the flour over the mixture and fold gently until combined.
  • Stir in coconut, lemon zest and lemon juice.
  • Pour the mixture into the prepared pan, spreading evenly.
  • Bake for 30-40 minutes or until a skewer inserted into the centre comes out clean and the top springs back lightly to a gentle touch.
  • Allow to cool completely in the pan before cutting into squares. Dust with icing sugar to serve.
  • Store in airtight container for 3 days.

Serving Suggestions:

  • Serve lightly dusted with icing sugar
  • Pair with a spoon of unsweetened yoghurt or whipped cream.
  • Great with fresh citrus segments. we recommend lemonade segments with lemon slice, any orange with an orange slice

Variations:

  • Replace the lemon zest and juice with orange zest and juice, lime, yuzu, or grapefruit (we recommend star suby) zest and juice.
  • Mix a variety of you favourite citrus together for a lovely citrus slice
  • If you like a strong citrus flavour, poke some wholes in the top of the slice when it comes out of the oven and pour over a 1/4 cup of extra juice. Leave to cool in tin
