Lime and Parsley Brown Rice Salad

We can’t get enough of zesty limes! We uses them in deserts, marinades, salads, drinks, the list is endless. Unfortunately, limes only grow for about 4 months of the year. If you are like us and love limes we recommend you plant a limequat tree as well. It has a lovely lime flavour, fruits all year and works well in this Lime & Parsley Brown Rice Salad. 

Serves: 4
Preparation: 10 minutes
Cooking: 15 minutes

Ingredients
½ red onion, finely chopped
½ cucumber, finely chopped
1 capsicum, roughly chopped
1 large handful parsley, roughly chopped
1 cup brown rice
2 limes for garnish

Dressing
Juice of 2 limes
3 tablespoons olive oil
1 clove garlic, finely chopped
Pinch salt & pepper
½ teaspoon cumin

Method

  1. Cook brown rice according to package directions
  2. In a small bowl, mix dressing ingredients together and set aside
  3. In a large bowl combine cooked rice, red onion, cucumber, capsicum, and parsley.
  4. Add the dressing and toss well to combine
  5. Garnish with slices of lime
