Citrus Salt - A Great Flavor Enhancer made with any Citrus Rind

Great Grandma used to make this citrus salt. Her children and grandchildren loved it so much that many requested it as a Christmas present. Now some of her great grand children are enjoying it.

There is usually at least one of the following citrus salts in a Citrus Trees Direct family member's kitchen. Asian inspired chilli citrus salt with Kaffir and Bearss Lime,  Orange Citrus Salt, Lemon and Chilli Citrus Salt or mixed Citrus Salt. We liked to use Citrus Salt on everything, but it is especially good with chicken, fish, pork, vegetables, rice and pasta dishes.

When making your citrus salt use any citrus rind you have. Be adventurous. Experiment with combinations of Lemons, Lime, Oranges, Buddha’s Hand, Etrog or any of the Quats. If you like a bit of spice in your life, we recommended the addition of dried chilli flakes.

Ingredients

  • 1 cup sea salt flakes
  • 1½ tsp grated citrus rind threads (use citrus zester)
  • 1½ tsp finely grated citrus rind (use cheese grater or micro plane)
  • 1/4 tsp dried chilli flakes (optional)
  • pinch of white pepper (to taste)

Method:

  1. Combine all ingredients in a small non-stick frying pan
  2. Cook, stirring over a moderate heat until fragrant (3-4 minutes).
  3. Transfer to a mortar and pestle, and gently pound until crushed and combined. (Salt will change colour slightly and take on the pigment of the citrus).
  4. When cool transfer to a jar and seal.
